These healthy Buffalo Chicken Bowls are high in protein and fiber and so delicious I’m craving them! They are great for lunch, a light Sunday dinner or meal prep. If you want to add vegetables, serve it with some avocado on top or a salad on the side. Ingredients for Buffalo Chicken Bowls

  • chicken: Cut three boneless, skinless chicken breasts into half-inch cubes.
  • onions: Slice half a cup of red onion. Feel free to use yellow onions if you don’t have red ones.
  • Spice: Paprika, cumin, salt
  • Black beans: Rinse and drain one can of low-sodium black beans.
  • bison sauce: You can buy it ready-made or make a quick homemade buffalo sauce with Frank’s Red Hot, melted butter and garlic powder.
  • Brown rice: Replace it with white rice, quinoa or cauliflower if you like.
  • cheese: You will need half a cup of shredded cheddar cheese.
  • Scallions for decoration

How to Make Buffalo Chicken Rice Bowls

  • Onions and black beans: Heat the oil in a medium saucepan over medium-low heat, add the onion and cook until slightly caramelized. Stir in the beans, spices and salt and cook for a few minutes.
  • chicken: Season the chicken with salt and pepper. Next, heat a large skillet over high heat and spray it with oil when it’s hot. Cook the chicken for about five minutes, turning it so that it browns on all sides. Transfer the chicken to a bowl and pour the hot sauce over it.
  • Assemble the bowls: Place the rice in each bowl and top with the bean, cheese and chicken mixture. If you are eating the bowls right away, I like to microwave them for 30 seconds to melt the cheese. Then top with onions.

How to prepare Buffalo Chicken Bowls meals

You can make these buffalo chicken bowls ahead of time and eat them for quick meals over the next few days. Place all ingredients in small glass containers and store in the refrigerator for up to four days. When ready to eat, heat them in the microwave until warm.

  • 3 8 ounces boneless chicken breast, cut into 1/2-inch cubes
  • 1 a teaspoon olive or rapeseed oil
  • 1/2 cup diced red onion
  • 1/2 tsp pepper
  • 1/2 tsp cumin
  • 1/4 a teaspoon kosher salt
  • 1 cup low sodium canned black beans, rinse and drain
  • 1/2 cup buffalo sauce
  • 3 glasses cooked brown rice
  • 1/2 cup partially skimmed cheddar cheese, or dairy-free cheddar
  • 1/4 cup chopped spring onion
  • Heat the oil in a medium saucepan over medium-low heat. Add the onion and fry until lightly caramelized, about 5 minutes.

  • Add black beans, chili powder, paprika, cumin, and salt; stir to combine and heat for 3 to 4 minutes.

  • While that is cooking, heat a large frying pan over high heat, when hot spray with oil and add the chicken.

  • Cook until golden brown and cooked through in the center, about 5 minutes, turning to cook on each side.

  • Place in a medium bowl and pour hot sauce over.

To serve

  • Pour 3/4 cup rice into each bowl, top each with 1/4 cup beans and cheese, divide chicken over bowls.

  • If I’m eating right away, I like to melt the cheese by putting it in the microwave for 30 seconds. Top with scallions.
